Today is E’s first birthday. It’s hard to believe that a year has come and gone so quickly! Although the intention of this post isn’t to boast about how great the past year has been, I certainly won’t deny how amazing it’s been having her in our lives.
We celebrated with a ‘small’ get together at our place last weekend. Only 45 people… no big deal! In addition to fitting everyone in our small bungalow (thankfully we have a finished basement!), we also fed everyone.
The menu consisted of standard party snacks (fruit, veggies & dip, cheese & crackers) and shredded chicken and pulled pork sandwiches. Both were done slow cooker style (we had 3 going at once!) with pre-made sauce which made it super simple.
The chicken was done with Buffalo sauce and ranch salad dressing while the pulled pork was cooked in root beer (if you haven’t tried it, it’s amazing!) and bbq sauce was added once shredded. In addition to a store bought cake and Nanaimo bars, I also make cupcakes for dessert.

The ingredients list is short: 1 box cake mix (your choice of flavour), 3 eggs, 1 can pie filling (your choice of flavour), canned icing (optional).
The directions are just as uncomplicated: mix cake mix, eggs and pie filling, bake, ice.
I went with lemon cake mix and raspberry pie filling and topped it off with cream cheese frosting. I will definitely be using this recipe again!
In lieu of presents, attendees were asked to bring non-perishable food donations for the Daily Bread Food Bank. Thanks to the generosity of our friends and family, we were able to collect over 100 items for those in need. This was close to 110 lbs. worth of baby food/formula, canned meat, soups, pasta & sauce, cereal, peanut butter, canned fruits & veggies and other breakfast items. Yay! Special shout out to everyone who helped out!
